Recipe: Aunt Gloria’s Glazed Strawberry Rhubarb Pie

Ingredients

  • Pastry for 2 crust pie
  • 1 1/4 cup sugar
  • 1/8 teaspoon salt
  • 1/3 cup flour
  • 2 cups fresh strawberry
  • 2 cups rhubarb (cut into 1/2 inch pieces)
  • 2 tablespoons butter
  • 1 tablespoon sugar

Instructions

  1. Combine all the ingredients except the 2 tablespoons of butter and 1 tablespoon of sugar in a bowl.
  2. Pour into a prepared 9 inch pastry lined pie shell.
  3. Dot with butter.
  4. Cover with top crust.
  5. Pinch to seal. (Use a little water around the pie rim to seal the crusts to each other.)
  6. Brush the top of the pie with cold water or milk.
  7. Sprinkle with 1 tablespoon of sugar.
  8. Make slits in the top crust to vent steam.
  9. Bake at 425 for 40 to 50 minutes.

Quick Notes

If you use frozen sweetened strawberries, cut the sugar in half.
